Maple-Glazed Salmon, a New Fave


This week's new recipe was a huge hit.  Thanks to Real Simple Magazine (and Toni, who sent it!) we enjoyed a yummy and easy-to-prepare meal that got four Aiduk thumbs up!

Maple-Glazed Salmon 

2 tablespoons maple syrup
2 tablespoons whole-grain mustard
Skinless salmon fillet
lemon wedges, for serving

Heat oven to 450*.  Mix the maple syrup, mustard, and a little bit of salt and pepper to make your glaze.  Place the salmon on a rimmed baking sheet (I like pryex baking dishes myself) and brush it with the maple mixture.  Roast on the top rack until opaque throughout, 6-8 minutes.  

A few notes... we use those frozen prepackaged salmon filets usually, and this amount of glaze generously covered four of them.  One for each adult, one for the girls to split, and one for Jesse's lunch the next day.  Next time, I might decrease the maple syrup and increase the mustard a little... but all in all it was an excellent dinner that took less than half an hour to get to the table.  (I always make the brown rice ahead of time and microwave it ;o) and we also had roasted green beans and red onions. Mmmm)
