Fun Kitchen Tip | Jelly Filled Muffins
So I was making mini muffins the other day and I found a fun tip in my America's Test Kitchen cookbook...
...fill the mold halfway with your favorite muffin batter, put a little dab of jelly in, and then fill the rest of the way! Bake as usual.
So fun! I used strawberry jam and added some fresh strawberries to the top.
I really like the concept because it adds a little extra moisture to the muffins... as well as a bit of a fancy-feel. I'm thinking they will be great in a bigger version to send with the girls to school. And I'm kind of day dreaming about fall... pumpkin muffins with homemade cranberry sauce inside!
